How Does A Sigma Blade Mixer Mix?
Sigma blade mixers mix by over-turning the product, splitting the product as it is forced down over the “saddle” or central ridge of the mixer bowl and by shearing the product between the blades and the bowl.
The most common blade arrangement is the tangential blade design (shown to the right) with on blade rotating 1.5X to 2X faster than the other blade, greatly improving mixing. The overlapping sigma blade design incorporates a pair of blades that rotate at the same speed and overlap each other.
Overlapping sigma blade designs are typically used for lighter mixing applications and are less popular as they have replaced by vertical planetary mixers.
